Easter Rocky Road

A 3 o'clock treat...

For many of you, Easter celebrations are about to begin and if you happen to have moved to Jakarta within the last twelve months, you may be wondering where Easter Bunny will source his eggs this year. Have no fear… this Friday, our ajb New Post Friday will provide you with a comprehensive list of where you can find many of your Easter needs, right here in Jakarta.

In the meantime, if you want to start getting into the sweet festivities of this season, why not make some Rocky Road to share with loved ones (or just for yourself.. we won’t tell!)

Easter Rocky Road


Ingredients
600 grams milk chocolate
300 grams marshmallows (chopped)
150 grams chopped jelly lollies (eg: snakes, jelly babies etc.)
100 grams roughly chopped unsalted peanuts
1/2 cup desiccated coconut


Method

1. Mix all ingredients together except chocolate
2. Gently melt chocolate and pour into dry ingredients
3. Mix thoroughly, coating all ingredients
4. Press mixture into lined tin
5. Refrigerate for a few hours
6. Cut into small pieces and store in airtight container (in the fridge)

Notes
Why not vary the recipe by adding dark chocolate and replacing the unsalted peanuts with a mixture of oven-roasted almonds and oven-roasted pistachios

You could also replace some of the jelly lollies with a handful of dried cranberries for an extra festive and sophisticated touch

Rocky Road makes a lovely gift. Wrap it up in some cellophane or tissue wrap, securing with some some cute string or ribbon. A little message written on a tag completes a gift straight from the heart

      Rocky Road is pretty more-ish, isn’t it Sharee… but I think that amazing slice you are famous for is pretty unbeatable… maybe you can share the recipe with us (please don’t tell us that it is top-secret!..) 😉
